This Japanese santoku refers to the three advantages, and can handle three foods. The Asian all-purpose knife is especially good for chopping garlic, slicing cucumbers and chopping onions. The blade has a small hole known as grantons, which is also known as grantons to prevent food from sticking when cutting. High quality German stainless steel has been strengthened and the knife is made in Spain. AMAZON is great!! it was ordered at 8pm Sunday night and I got it at 913am Monday! Now about the knife, it is top notch. Great balance and size for me. Some men might find it a smaller handle if you have larger hands. $ for $ this is best in class!!Update the knife is still great for the $ but the one I got hard a TINY nick in the black handle right near were you hold in. So I sent it back and got the ZWILLING Pro 7" Hollow Edge Rocking Santoku Knife for $79.99

This knife makes prepping food almost effortless, I love it! it is well balanced, easy to handle, and sharp as a razor! Good knives make ALL the difference in the world if you cook a lot, it's a great investment, especially at this price! A brilliant addition to my kitchen arsenal. It’s the perfect size and balance to complement my nine-inch Santoku knife and my French knife, and I find myself reaching for it before the other two, especially for smaller jobs (which make up the bulk of food preparation).

Overall a fantastic blade. Super sharp and an awesome addition to your kitchen staples. The edges of the knife are a bit pointy and dug into my knuckle but that’s on me and how I hold it not the knife itself.I have never cut through scallions without squashing them until this knife. Perfect blade!

Santoku knives are my favorite, and I was looking to upgrade my older 5 inch one. This one worked out so well, a few months later now, I got another one. It's the perfect kitchen workhorse for me.
